Chocolate Butter Cookies 巧克力德国酥饼

Made this right before Chinese New Year, but now only get to blog about it. :p This biscuit is inspired by German Butter Cookies from Min’s blog.
Below is my modified recipe, I use the dough to make 3 type of cookies with different decoration.

Ingredients:
(A)
250g         Butter牛油
  80g         Icing Sugar糖粉
(B)
250g         Potato Starch马铃薯粉
100g         Plain flour面粉
2 tbsp       Coco powder可可粉    

For Decoration Purposes:-
Sugar Beads糖珠
Chocolate Chips巧克力片


1.  Mix butter with sieved icing sugar with hand mixer.
2.  Add in sieved ingredients B and form a dough.
3.  Divide the dough into small balls (depends how big you want your cookies to be)
4.   Now you can choose to decorate your cookies with different style:-
  (i) Press the small dough with fork
 (ii) Press the small dough into sugar beads then shape it.
(iii) Press the small dough with fingers then decorate it with chocolate chips.
5.   Pre heat oven to 170’C. Bake for 15-20 minutes.

Trying to make smaller roses (at least less than 1cm). hmmm... not really satisfied with the result. >.<

White Sugar Cake (光酥饼)

After googled only realized English name of this cake is White Sugar Cake. First tried this cake in Hong Kong, I love the taste and the texture.

Here is some of the recipes googled online.  I tried first recipe, my white sugar cake is a bit hard and it look yellowish but taste good. Will try 2nd recipe tonite.

Ingredient:
 (A)
100g                 High Protein flour高粉
  50g                Low Protein flour低粉
    1g                Baking soda小苏打
 3g                Baking Powder泡打粉

 (B)
  80g                Sugar白砂糖
  55g                Milk牛奶
  15g                Egg蛋液
 
 (C)
  20g                Melted Butter牛油

Method:-
1.      Sieve (A), then add in (B), mix well.
2.      Add in melted butter. Mix lightly.
3.      Rest the dough for 15 minutes then divide into 6 small flat ball
4.      Bake for 15 minutes at 180’C.


Ingredients: (8 pieces @ 6cm diameter)
(A)
 2g     yeast
30ml   warm water

(B)
90g     plain flour
10g     corn starch
  4g     baking powder

(C)
4g       skim milk powder
35g     sugar
10g     condensed milk
20g     lightly beaten egg
½ tsp  vanilla essence
 1 tsp  corn oil

Method:

1. Mix (A) well and stand aside for 5 - 10 minutes.

2. Sieve (B) into a mixing bowl. Make a well in the middle of the flour mixture, add in (A) and (C). Stir with a pair of chopsticks (or use your hands) till a sticky dough is formed.

3. Cover the mixing bowl with a piece of glad wrap and rest dough for one hour.

4. Flour working surface and hands. Divide dough into 25g pieces each (or any size you desired) and shape it into a flat round disc.

5. Place shaped dough on to a floured baking paper and dust some flour on the surface of the dough. Cover it with a damp towel without touching the surface. Rest shaped dough for 30 minutes.

6. Cover the Guang Su Bing with a piece of foil (make some holes in the foil with a toothpick) loosely and bake in the middle rack at 180C for 13 minutes

Eyes Lasik Anniversary

I did my eyes Lasik last year on 23 Apr 2010. Wanted to get rid of my spec for quite some time but not dare to take the risk and Lasik operation is quite expansive. Oh… u might be wondering why not just wear contact lens. I start wearing contact lens since secondary school time. Maybe I didn't take care of my eyes so much back then, I kind of having mild dry eye syndrome which contact lens will make it worst.

So happened that me and my family passed by Vista road show on a random weekend, after check up I am qualify for eye Lasik surgery. Life is short. Just do it. The package i selected is Intralase + Advance Aspheric B&L Lasik for both eyes @ RM5,596.(Original price RM5,996, discount RM400)

The drastic different after eye Lasik with perfect eye sight is I can check out the clock whenever I wan without glasses. It’s is very irritating that at night or early morning you need to get up and wear ur glasses just to find out what time is it.

I can run and swim without worrying blurry obstacle. Hahaha…. Sound like I’m so keen in sport. ;p But I can walk under rain without unnecessary clumsiness with wet spectacle now for sure.

My doctor is Alan Koh Kok Khiang (oh… now oni I realized he is triple K) ;p He is very patient and gentle. He did calm me down a lot during surgery. He also did eye Lasik for Myfm DJ Gan Mei Yan. The sales person showed me their picture during promoting time.

Can't remember whether creating flap on the cornea here or on the next machine.
 Lasik time, I need to stare at a tiny red light for 60 second for each eyes then voila "it's done!!" :D

They gave me a very manly sunglasses coz after lasik eyes are very sensitive to sunlight.

Sewing Journey

Steamed white sugar sponge cake ( Bak Tong Gou 白糖糕)

This dessert is quite easy to make but a bit time consuming as it need about 6-8 hours for fermentation.You can choose to prepare at nite and let it ferment before sleep. Next morning just steam for 15-25 minutes then you will have nice fluffy dessert for breakfast. But please take note; it will turn sour if it gets over fermented.

Ingredient:
(A)
200g      Rice flour粘米粉
140g      Sugar白砂糖
410g      Water水

1. Add all ingredients into a pot, mix well and keep stirring with low heat. Make sure the pot is big enough for double the ingredient coz after fermentation, the mixture will almost double the size.
2. Cook until the mixture is a bit sticky and increased thickness (like sesame paste) removes from heat. Bear in mind that the mixture will continue to cook until it is completely cold off. Please continue to stir for a while and sieve it to remove clumps.
 (B)
½ tsp     Baking Powder泡打粉
1 tsp      Dried yeast乾酵母
2 tbsp    Water水

1. Add baking powder and dried yeast into water. Mix well then add into cold off mixture (A). Cover with cling wrap, let it sit for at least 6 hours.
2. Laid a layer of cloth or baking sheet on steamer tray/baking mould. Steam for 15-25 minutes, depends on the size of the mould. Bigger mould, lesser time coz thinner layer. J
This is how the mixture of water, rice flour & sugar look like before heating it up.

 I used white clothe for steaming.
After 20 minutes.
  This dessert is best to serve at room temperature.
